The detail that changes everything is the rice. We use Japanese Koshihikari, cooked twice a day to keep the right grain and temperature at service. It is the foundation of a good sushi, and what Thonon locals come back for rather than a standardised all-you-can-eat menu.

Why the rice makes the sushi.
A good sushi rests first on its rice, long before the fish. Japanese rice is a short-grain japonica variety, richer in starch than long-grain rice: that is what gives it the gentle stickiness that lets each piece hold together without ever being dense. We work with Koshihikari, one of the Japanese varieties most prized for sushi, because the grain stays supple and fragrant once cooked.
The next secret is the seasoning. Once cooked, the grain is mixed while still warm with rice vinegar, a little sugar and salt: this is the seasoned rice known as shari, which gives sushi its lightly tangy balance. At Sushi & Nem this rice is cooked twice a day to stay at the right temperature and keep its softness until service, never reheated or left to harden under a lamp.
