Is sushi halal? Mirin, surimi, sauces, eel: what to check for halal sushi (a sushi chef’s view)

“It's fish, so it's halal” is only partly true. After twenty years at the counter, Vincent, our sushi chef, shares where the real questions hide: rice, sauces, processed ingredients and cooked rolls.

A plain salmon nigiri on vinegared rice is close to halal by nature. But a sushi platter has many more ingredients.

We do not rule on religious matters; we explain what is in each piece so you can decide.

All major Sunni schools consider fish lawful without ritual slaughter.

Maliki, Shafi’i and Hanbali schools generally allow all seafood; the Hanafi school is more restrictive and divided on shrimp. Ask a competent religious authority if in doubt.

Sushi rice: mirin, sake and rice vinegar

Sushi rice is seasoned with vinegar, sugar and salt; some counters add mirin or sake.

What is mirin, and does it contain alcohol?

Hon-mirin is around 14% alcohol; mirin-style seasonings contain little or none.

Rice vinegar: fermentation and status

Its alcohol is converted into acetic acid; most opinions consider vinegar lawful.

Questions to ask the restaurant

Is your rice seasoned only with vinegar, sugar and salt? Does your sushi vinegar contain mirin?

Sauces to watch: soy, unagi, teriyaki, spicy mayo

The surprise

Naturally brewed soy sauce may hold traces of alcohol; unagi and teriyaki sauces often contain mirin or sake.

Check soy sauce labels for added alcohol; halal-certified soy sauces exist.

Spicy mayo and sweet soy sauce are usually alcohol-free, depending on the soy sauce and any mirin used.

Surimi, eel, fish roe: processed ingredients

The more processed an ingredient, the more there is to check.

  • Surimi

    Fish paste with starch and flavourings; check the flavourings.

  • Eel

    Generally treated as fish, but usually glazed with mirin-based unagi sauce.

  • Fish roe

    Tobiko and masago may be marinated with mirin or sake.

Gelatine is rare in sushi; its origin matters when present.

As soon as there is meat, it must come from a certified halal supply chain.

Ask whether the fryer is shared with pork and whether the tempura batter contains beer.

Pickled ginger, wasabi and sides

Gari is ginger in vinegar, sugar and salt; wasabi is usually horseradish and mustard.

Some miso pastes contain alcohol as a preservative: check the label.

Is shrimp halal?

Generally yes for Maliki, Shafi’i and Hanbali schools; Hanafi opinions differ.

Hon-mirin is about 14% alcohol and opinions differ; ask whether rice and sauces contain it.

Does soy sauce contain alcohol?
